MACKEREL WITH GOOSEGOG SAUCE

Combine the beautiful earthy flavour of Mackerel with our fruity gooseberry number. Perfect for any evening.

Serves 2

INGREDIENTS

◦ 15g Unsalted Butter

◦ 250g Fresh Gooseberries

◦ Pinch Sugar

◦ 1 tbsp Yarty Goosegog & Elderflower

◦ 2 tsp Olive Oil

◦ 2 Mackerel Fillets 

METHOD

1. Melt the butter in a small pan with the gooseberries and sugar. Cover and simmer for 10 minutes.

2. Remove the lid, add the Goosegog & Elderflower and cook for 2-5 minutes more; until the sauce has thickened slightly. Remove from the heat and cover to keep warm.

3. Heat the olive oil in a frying pan over a medium-high heat. Score the skin of the mackerel fillets in a few places. Cook the fish skin-side down, for 2-3 minutes; until opaque at the edges. Then carefully flip and cook for 1 minute more; until cooked through and fuly opaque.

4. Serve the mackerel fillet with the gooseberry sauce.

SERVING SUGGESTION

Great with new potatoes and green beans.
